Low Cal Dinner: Roasted Veggies!

I truly love the taste of veggies that have been roasted in the oven as roasting truly enhances the taste of the veggies.  Of course veggies on the grill would be spectacular as well, but yours truly doesn’t have that option at my current location.

I eat several small meals a day (more about that later) and here is what I had for dinner today.  Low maintenance to make, low calories.  I normally eat a little more than this, but this was quite delightful.

Roasted Eggplant and Plum Tomatoes

2 cups of eggplant (roughly 1/2 of an eggplant). Slice into cubes.

2 plum tomatoes cubed and put on cookie sheet sprayed with Pam.

Spray veggies with Pam and sprinkle with basil.  Cook in a 350 degree oven for 20 minutes.  Enjoy!

I had mine with 3 slices of Jennie-O Turkey Bacon for protein.

The whole meal took 20 minutes and was less than 150 calories.  Not a bad “cleansing meal” for people like me to have after spending a delightful Christmas weekend in a food coma.
